Adventures in Organic

Occasionally I will post various updates on our great adventure to eat and cook healthy. As Brett Favre in hungry pursuit for a final superbowl ring, so are we in the hunt for healthy, delicious, organic recipes. The absence of football season is clearly felt in this house. Since writing of the angry sentiments I have towards the unjust meat companies, it is only appropriate I follow up on my promise to feed this family humanely treated, non hormone injected animals (maybe I should become a vegetarian, I really don't even like to admit I eat animals). Moving on... Our farmers market now sells grass fed beef! I currently have two roasts in my fridge, one of which I will make for Easter as I have no source for Ham. Unfortunately, I am unable to buy poultry from my same beef man until the end of spring and into summer. Thus, I bought a free range whole chicken from my local health food store in the amount of $14. A lot, I know, believe me. But what a wonderful discovery I made! After de-boning the bird, an awful experience may I add, I will hopefully get used to it, or learn to do it better, I took the rest of the bird and made delicious chicken stock! Two quarts of free range chicken stock that would normally cost me $6, in other words my $14 bird wasn't that expensive after all! Here are some pictures of my "adventures".




On another side note, I've stopped buying bread. Thanks to my cousin Buffy and her fabulous whole wheat bread recipe that even an amateur like me can master on the first try, we have been sans preservative bread for a full month! Here is the recipe and here are some pictures, like I said perfect on the first try!


Whole Wheat Bread

4 C. whole wheat flour

¼ C. vital wheat gluten (I found it in the natural foods section at Albertsons – keep in fridge after opening)

2 ½ C. very warm water

1TBSP yeast

1TBSP salt

1/3 C. oil

1/3 C. honey

Preheat oven to 200 degrees. Stir together flour and vital wheat gluten. Add water and beat 7-10 minutes. Add yeast and beat 3 minutes. Add salt, oil and honey, beating well after each separate addition. Add more whole wheat flour until dough begins to pull away from sides of bowl (usually I don’t have to add much at all – a few tablespoons. It shouldn’t be dry, just manageable).

Pour a few tablespoons of oil on counter and spread with fingers. Pour dough onto counter and knead 2-4 from different directions. Divide dough in half and form loaves. Place in greased bread pans. Cover with wet towel and place in warmed oven. Turn off heat and let rise 20-30 minutes. Remove towel and turn on oven to 350 degrees. Bake 25-30 minutes and butter tops when done.

Loaves freeze pretty well.
